How do you establish value of a beautifully toned Unc coin that only goes up to XF in Krause

How much is too much when it comes to buying a pretty coin like this? Just because there is no price in Unc are coin like this so rare that they shouldn't exist or is there another explination? Feel free to post pictures and tell stories

I have many of the same questions with talers & half talers in Krause. To generalize, I see many people throw anywhere from 20% to 50% on the top of the XF value for a nice uncirculated version. For an upper end MS64/MS65 and above coin, I think you can basically name your own price.
.
For example, one of the coins I posted about earlier about in the week, a Costa Rica 50c counterstamped on 25c, is only listed in VG through XF. In XF it lists for a whopping $7.50. I bought an NGC MS65 for about 9x XF, and am quite happy with it at that price.
For aesthetically-appealing high-grade examples of these coins, it's whatever the market will bear. As I mentioned in my earlier post, when I see Krause topping out at XF in their listings, that implies to me that the piece is not frequently found in mint state. I wouldn't go so far as to say "rare".
Speaking of the coin in question, were these overstruck? If not, I'm questioning the MS designation due to what appear to be scratches on the obverse...

Agreed. Some uncs sell at "XF" catalog prices, others at 10X or more.
