Jumbo means large margins on stamp.

The extra piece of border paper is called selvedge. This is unrelated to "jumbo"; which smittys anwered.

If you know anyone who is a member of the American Philatelic Society, as to see their copy of the October 2005 issue of the American Philatelist. It has a wonderful article about monster (jumbo) stamps.
