How is the sequence of auction lots determined?

Most auctions with multiple sessions seem to follow a predictable order - by ascending denomination by date. Session 1 starts with colonials, and the last session wraps up with double eagles, then the odds and ends (e.g., patterns, errors, etc.). But occasionally I'll see one where session 1 has colonials through double eagles, etc., and the next session starts over again with colonials and goes through all the series again.

Doesn't it seem odd to do that? What would be the reasoning behind it?

New collectors, please educate yourself before spending money on coins; there are people who believe that using numismatic knowledge to rip the naïve is what this hobby is all about.
