That is odd. You can put how many you wish to have if your store. Why not put 3 and when they're gone, they're gone.

If I tried to buy this and he said 'sorry, sold out', I would neg him regardless of his warning.

What he is basically telling you here is that he has a shop/mail order business and that if someone places an order for that piece before the auction ends, the auction listing is void. I have seen this many, many times before. I think ebay allows them to do this. My own personal opinion is, once you list a coin for auction, it should be pulled from your inventory until the auction ends.
