Don't forget the classic 88 Donruss set, featuring the Craig Jeffries RC. Now that is a set that will go nuts in the near future...mark it down.
I tend to disagree with anything after 1970 being plentiful. The 70's are what I mostly collect, and I have been finding it somewhat difficult to find unopened material from 1970-1975 lately. 1976 and up is around, but prices are often crazy. I tend to find vending boxes more frequently than cello or wax boxes, but GAI packs are available on Ebay with some regularity.

You got it - the Christmas racks were created by a third party from loose singles, some speculate they were created years later. General consensus amongst wax collectors is that they are junk, and I've never heard of anyone who was happy after breaking one.

Two thoughts:
One, this market is hot right now. Prices are often 200 - 300% higher than they were 2-3 years ago. Many would speculate that continuing price increases on those levels are not sustainable.
Second, on opening them up. As value of graded cards from the set rise, often do the value of unopened packs. It's not a 1:1 relationship - but there is not much of a pricing arbitrage available in this market. The price of packs will always be higher than the expected value of what will come out of the packs. That relationship will never change. When it gets too close - people rip more often than they already do.
