You will pay a bit more for one of these (I'd say around 650$), but I think that mint state 61 and 62 later date three cent silvers represent great rarity for the buck.
How about the 1909-S Indian Head penny. Low mintage yet still affordable. You generally can't get a BU example but you should be able to get an VF to XF example for under $500.
1876-P twenty-cent piece . . . in circulated condition you can find them for under $500 and they had an original mintage under 15,000 . . . with lots melted.

Going by availability in the market and not by mintage figures, I'd say the 1883-S $10 Liberty Head ("Coronet") gold in AU58 (Greysheet "bid" is $400).
But I don't have any population reports to look through.
This doesn't meet the AU-55 requirement, obviously, but I think that 1848 seated dollars are very underrated. Nice big pre-EIGHTEEN-fifty coin with a mintage of a scant 15,000. You can get a high-end fine for 500 bucks. They're not easy to find.
