What does UBER mean. I've seen it in a few headings of coins for sale.

Isn't "uber" a German prefix for "more" or "greater"? I'm not sure.

Well, if you're on the German eBay, it would mean "over". Can you post a link to an example, DAM?

Means super or the best. The term is more widely used now because it's popularity of use in the online gaming world.
