Can Someone explain the RE-Grade process?

I am going to submit to coins to PCGS for re-grading...Can someone tell me how the process works?

When the coins are received, they will be removed from the current holder and go through the system as if they were raw. The graders do not know these were sent in under the regrade service.

Do you still select a particular service level as before?

Yes. At the top of the form choose REGRADE and then choose the service level.
