My sources seem to indicate that PCGS will be doing just fine. They are currently overwhelmed with the number of coins they have received. The real shortage is in hours the graders can put into doing their work. Along with the number of graders they have available to hire at a price they can afford. PCGS would love to have an additional grader or two. However, the current hot coin market has taken the qualified graders out of their price range.
Granted, you are 100% correct on the Lincoln Cents. Way too tight on the standard for those coins. However, there are many areas of the numismatic market that their grading is just fine. Plenty of money is made by the dealers who recognize PCGS's current grading agenda. I would suggest broading your range of submissions to find the current profitable niche.
