I would take out the slightly more than a hairline scratch on the shield of a green label 1918/17-S SLQ in PCGS MS63.

Coopercoin's idea is very interesting about no presidential portrait coins but then I would lose all hope for my Reagan Half. Russ would be crushed without his precious JFK's and would be lost forever to the world of two-cent piece oblivion.
As for changing just one thing on one coin... I would change my $10 Liberty Gold Piece into a $20 (you pick the mm/year and type, I am pretty open on this).
Is that asking too much?
