1941 DDO Auctions vs Cherrypickers- What Price?

I noticed in two auctions last week, one being at Superior in which a 1941 DDO FS 018 was sold for $3500.00 and about week ago another went on Ebay for $2800.00. Despite this Cherrypickers shows an MS 63's value at $125.00. These two coins which sold were MS 65, one by NGC and the other by PCGS.
How in the world can anyone every figure out what their coins are worth? Who or what would the pro's use to determine what the current market value of a coin was?

    Availability, desirability, financial wherewithal at a minimum.

    PCSG lists a 1941 DDO in MS-64 at $675.00, and other publications don't list prices anywhere near for what these coins sold at auction. How can you ever be sure that if you want to sell a coins that you are getting the current value. Is there someplace you can reference for a true value. The auctions estimated that the value for these coin was from $4000.00 - $6000.00. Where would they get this estimate?
