I have many American Eagle-proof sets From the U.S. Mint and several 2023 Morgan and Peace dollars from the U.S. Mint in airtight capsules. all in their separate boxes. Should I open them up and send them for grading?

Welcome to the forum. That depends on what you want to do with them. Are you planning to keep or sell?
If keep, then it’s up to you how you like to enjoy your coins.
If sell, look at the difference on eBay sold listings between raw and slabbed examples and then add in the cost of grading - there’s your ballpark answer.
There are a lot of MS70 of these morgan and peace dollars, might be worth it to just acquire one of them graded perfect already instead of chancing grading.
