Maybe Kubes (i.e. Kubiak)?
Tom Brady was a pretty good backup to have on the roster for Bledsoe.
Jeff Hostetler wasn't too shabby when the Giants needed him to step up.
Kurt Warner for Trent Green.
Jason Garrett was a very serviceable backup to Troy Aikman.
I have to give Ryan Fitzpatrick a mention, he might not have been the best, but his entertainment value was priceless.
Just off of the top of my head Nick Foles,Tom Brady,Kurt Warner and Jeff Hostetler all were backup QBs who took over for the starter at some point then led the team to a SB win.

Earl Morrall gets my vote. There's the obvious Miami undefeated season, but there's also the 1968 Colts season. Morrall started every game in that 13-1 season, but Unitas was injured in the last preseason game. And it was Morrall's first season on the Colts, so that single preseason was all the prep he got with the team.
Steve Young was a pretty decent backup.
Collecting 1970s Topps baseball wax, rack and cello packs, as well as PCGS graded Half Cents, Large Cents, Two Cent pieces and Three Cent Silver pieces.
I totally forgot about Steve Young. This is a tough question to answer because what is the criteria for it?
Who was the GOAT backup quarterback?
Are we talking guys that were backups at some point who ended taking over for the starter then had great careers as the starter themselves?
OR are we talking career backup quarterbacks who had great careers mainly as the backup but took over for the starter when needed, even to the point that they led their team to a SB win, but eventually returned to the backup role soon after?
I tried doing a few different Google searches for NFL backup quarterback career stats but didn't find any noteworthy stats.

Morral, Young, Danny White,
and many more.
Hard to choose.
Terry Bradshaw was a serviceable backup to the legendary, and undefeated, Mike Kruczek.
George Blanda worked well when needed.
I think Hostetler did the best job as backup when Simms went down and he led them to the SB
George Brett, Roger Clemens and Tommy Brady.
When Dallas got Berni Kosar from the Browns and proceeded to help win the super bowl in 94. Probably not a GOAT but to get a high calibre QB that could read defenses better than the coaching staff was a great acquisition.
"When they can't find anything wrong with you, they create it!"
Plunkett coming from behind Pastorini (who replaced Stabler) then Plunkett going on to win 2 superbowls and get an MVP in one, which also happened to be the one the season he took over and became the qb for the first team to ever make suprbowl from wildcard position is pretty unbeatable. Blandas run as kicker and QB at 43 for an injured Lamonica was definitely notable. Could also not make a list of backup QB greats without the hat tip to Earl Morral another one of the arguable GOAT backups
Aaron Rodgers served 3 years as a backup before he got his chance.
