    Here's a very simple and light side dish that works well with grilled meats particularly in the summer time. I'd recommend it in particular to those of you that like Asian food.

    Sweet and Sour Cucumber Salad

    2 pounds cucumbers
    1 t. salt
    1/4 C. light brown sugar
    1/4 C. cider vinegar
    1 t. soy sauce
    1 t. sesame seed oil

    Peel the cucumbers. If you want it to look a little fancier leave alternating strips of green skin behind on the cuke. Cut cucumbers in half and scoop out and discard seeds. Then cut the cucumbers on the diagonal into slices 1/4" thick.

    Put the cucumber slices in a bowl and sprinkle in the salt (to draw out excess moisture in cukes), mixing it in. Put bowl in a refrigerator and let stand for 1 hour.

    Mix the brown sugar, cider vinegar, soy sauce and sesame seed oil together. This is your salad dressing.

    After 1 hour take the bowl out of the fridge and drain the bowl of any liquid that came out of the cukes. After the bowl is drained, stir up your salad dressing and pour it over the cukes in the bowl. Mix the dressing and cukes together and then serve.

    Serves 4 - 6

    As far as honey, it is undoubtedly China. I am just as sure that all of it has been adulterated to some extent and wouldn't take it for free.

    Sounds great skyman i love cucumbers. My mom always made what she called ice box cucumbers. As you said peel or leave strips of skin on. Sugar, water,vinegar and a large clean jar place cuccumbers sliced in the jar add ,sugar ,water, vinegar and allow them to cure a day in the fridge. I've also seen onion slices added to the mix. A great addition to summer foods .
