This is a topic that is really fascinating to me. There are fundamental differences in how the human eye perceives a coin "in hand" versus how the coin appears in a photograph. In other words, the advent of widespread, high-quality coin photos has probably affected what we end up buying.
Photography is a funny thing. As the OP says, sometimes the photo just pops and it ends up being more than the sum of the parts. Here are a few I think make the coins look phenomenally good. Interestingly, none of these have fancy colors. All of these are in PCGS plastic:
Believe it or not, this coin is in an MS62 CAC holder.
This one is just super-cool, and the photo really emphasizes that it's a wholesome, lightly circulated coin:
This one is in a MS65+ CAC holder. Looks pretty nice for the grade IMO:
Yes, this is a nice coin to start with, but the photo here is sort of like capturing lightning in a bottle. I'm not sure I could ever get exactly that image again.
A rather boring coin, but the photo makes it look pretty darn nice. Again, I don't think I could improve on it.

I just love looking the large size photo of this Morgan Dollar. Phil captured the rainbow colors on this perfectly.
Here's my 1989-S Congress Bicentennial silver dollar. I love the perfectly positioned explosion of color!
Picked this up last year. "Something" piqued my interest from the online photo.
Ordered it and was pleased. Even the TrueView didn't ...quite.... do it.
So, when it arrived, I shaded the ambient light and got the way it looks in hand.
It kinda "wow'ed" me.

Considering the comparatively small size of a dime, the photography is great in bringing up the multi-struck "rings", plus the retained struck through on the reverse.
Well, since you posted a Lincoln error, I'll post some of my off-centered Lincolns, although they aren't as dramatic and awesome as yours. I really dig it, man.

PCGS said the coin has a wheel mark. A wheel mark is defined as fine hairlines. There are no hairlines to be found in hand. Photographed the coin and they jump out at ya.

I took a lot of heat for juicing this photo when I first posted it, even though members who had seen it in hand confirmed the photo looks just like the coin (and it’s not juiced...)

1831 Capped Bust Half.
This 500 year old coin, about the size of a quarter, is a wow coin. Color is THICK! Phil and co were able to bring it out.

I have several instances which would fit this description but here's a Roman gold coin I bought off of a poor set of eBay pictures and it just sings in hand. The toning was caused by the ash from Mt. Vesuvius at Pompeii where this coin was buried for 1800 years:
This in an amazing coin and the photo only enhances its beauty. It is an 1892-CC double eagle with prooflike surfaces (not too common on CC gold) and attractive toning on both obverse and reverse.
