I have a little issue with your premise. I have many coins that I've paid well above "Price Guide" values to obtain, but it was because I thought those coins were worthy of their price. I would also expect to be able to get above book values were I to sell them. In these cases, I don't think I overpaid for the coins.
interestingly, when I sold my Peace dollar collection, the ones that I made the most money on were, without exception, the ones I "overpaid" to obtain. Here's one of them:

I paid up for this prooflike 1823 years ago in a PCGS AU58 holder....it looked MS to me so I sent it in to CAC not long ago and it got a gold bean! Increased price....justified!
