Morton's is right around the corner, behind what used to be the Sofitel (can't remember what it's called now.) About a half mile away is Shoeless Joes, a sports bar. Near that is the Ram, a brew pub/restaurant. If you like seafood, it's also worth the drive to Bob Chinn's in Wheeling, about 20min north of Rosemont. It's one of the top grossing restaurants in the country; watching the employees work there is like watching ants in an ant farm.

There is a seafood joint down the street from Gibson's too... McCormick & Scmick's I believe. There is also a sportsbar with decent eats inside the Hyatt next to the Convention Center. And as previously mentioned, Gibson's and Morton's. The blue line for the L is also within walking distance from the Convention Center, so public transportation can get you around to good eats as well.
Me and the Mrs. are looking forward to Barnaby's. It was a much larger operation back in the 70's and they had restaurant's in the Milwaukee area as well. We remember eating there as kids.
The new casino is not far from the convention center... not walking distance and I have not been there but I would imagine they'd have some good resturants.
