maybe back the lights off a bit, seems kinda washed out with light. Also, maybe a bit of adjusting the white balance on the camera to get rid of the pinkish color?
The one light situation appears to be less washed out. If you stick to two lamps you may want to use a light spreading filter over the lamps. If you can't find any you can make them out of the prismatic type lens covers used for fluorescent fixtures whicch should be available at any place such as Home Depot, Menards, Ace Hardware or any such place. They usually come in 2 x 4 foot sheets unfortunately but you could make numerous filters from that. They also come in clear, smoked and other clarities. The smoked ones will not only dissapate the light but will tone it down somewhat. However, all your photos are pretty darn good so just keep on experimenting. They appear a little over the 50 KBs. What size are those photos?

Thanks for the filter tip. The I just cropped & sized the photos down to 800xwhatever or 600xwhatever for these purposes. The camera spits them out at 3008x2000.
One light is best for circs. i tend to use light at as high of an angle as possible, no filters. Sometimes dropping the light to a lower angle will help with them also (increases contrast more) . Low contrast coins need high contrast light. I manually focus everything. Get the light in close (right next to the lens), it will help you get a faster shutter and help sharpness.

That's the rig I have. It works great but the moron who put this one together put the thing on the pole upside down. With a good macro lens you'll probably take shots from closer in. Anyway, I do.

Thanks for all of the feedback, I ended up ordering an electronic remote shutter release and a new copy stand (Instead of my rigged up one) to help with the sharpness issues.

I'm just doing in max resolution to take the picture, I take it into photoshop to crop+resize anyways, so it's moot.
