The old saying is never buy a car that was made on a monday or a friday. Could the same be true for coins graded on a monday or a friday?

I think both are myths. The car one especially since robots don't care about Monday or Friday.

Besides, how would you know when either were done? And what if a coin was graded by Grader A on Monday and Grader B evaluated it on Tuesday and it was verified by Grader C on Wednesday?

I don't know, I've gotten some nice Monday and Friday graded coins.

Unless you have some inside info you really don't know. Kinda wonder how that saying came to be tho.

In the Air Force it was well known that the best aircraft came off the assembly lines on Wednesdays. The workers were to hung over on Mondays and too tired on Fridays. It seems they tighten every rivet tighter on Wednesdays. If it's true about assembly lines, I guess it can be true about coin grading.

Years ago 1968, with my Olds 442 I knew what date it was manufactured from the sticker on the car. At least there was a sticker if it was the right date who knows.
