Ignoring holders and grades, which 1879 Morgan do you prefer?

2 ... no contest.
That is a tough choice. Number 2 is obviously a higher grade coin but you said to ignore the grade. The toning on number 2 is just okay and is beginning to go terminally black along the rim from 6 to 9 o'clock. Based on just the radial lines shown in the photo, number 1 appears to have the better luster. Number 2 seems a little softer luster and more subdued. From that I picked number 1. If you compare the overall quality (grade) then number 2 is much better.
In this case... I like #1.
I don't like the toning as much on #2.
Here's a warning parable for coin collectors...

As mentioned 2 is better condition but personal preference is nothing worse than toned silver. Now if I could give it a dip I'd select #2

My guess is #2 is in a red field holder.
But I’m not a huge fan of either. I’d prefer colorfully toned, or blast white. These two are tweeners.

With the price differential, it is difficult to ignore the grade.
I chose Coin 1 because this coin look more fully struck than Coin 2. However, as @Boosibri pointed out, this photograph may be under exposed and the shadows give the illusion of a better strike. Both are beautiful Morgan Dollars.

Number 2. Has better eye appeal. Cheek looks clean. Eagle looks a bit frosty. Does this have PL surfaces? From the 79-s I’ve seen and the ones I have many of them do.

The eye appeal on number one is destroyed by the dark 'X" on the field by the nose.
The dark marks on the reverse by the "O' hurt also.

To me it looks like #1 has the strike and #2 looks cleaner as in not many hit's. So you can get a coin with nice eye appeal or a coin with a nice strike, The key is to find both in one coin #1 for me.
Hoard the keys.
