I like the spanish colonial 2 reales. That's a focus of mine. I seem to be working on a sort of type set collection of silver coins in a similar size and time period, from the German States, Netherland Provinces, Swiss Cantons, and so forth.
I didn't really realize that was my direction until quite recently, though.

I collect most anything darkside. I've got type sets going in British (monarch by denomination and monarch) and Canadian. Other countries I collect by eye appeal and coin design based on what reaches out and grabs me -- many types I've seen on this Forum. I recently started trying to do a worldwide type set for my birth year (1961) and have since started picking up as many nice pieces from 1861, 1761, 1661 and 1561 as I can find -- it's satisfying because it narrows the search and makes you appreciate the changes from century to century.

Your best bet for an "X country" is Chinese historic and provincial (when using the modern "Pin Yin" spelling of Chinese characters). Something like Xinjiang province, either government mint or one of the 18th century rebel groups. There's also the Xi Xia Empire, a breakaway region in the north of pre-Mongol China (1002-1227 AD) - some of their coins are reasonably priced, according to the Jin catalogue.

I've been pondering that one all weekend.
I first got pulled in by trying to pick up a couple pieces of bullion type coins as I thought the price of gold was low in 2000 (I guess I was right).
After stumbling about ebay awhile, I eventually thought to look at the Japanese gold coins and saw someone going by the handle of Satootoko bidding on a few, for some reason the name stuck in my mind.
Eventually I ambled over to the Liteside boards and signed up (and JadeRareCoin was kind enough to look at something I bought and confirm, yup-I was ripped off, not too much money but still, left a bad taste in my mouth). I wandered over here, and hey, there was that Satootoko guy again! He even answered some questions for me and looking darkside I realized what a tremendous amount of cool stuff is out there.
Naturally, I started off doing an 1870- present Japanese type set (as I was getting hooked on all this while living in Japan). I'm still interested, but I'm 'taking a break' from actively pursuing it for now.
I also started an OFEC (one from every country), but found I have lost interest--too many tangents and it began feeling painful to think about....once it got to be a grind it was time to shift gears.
Instead I tried to figure out what I liked from the OFEC experience as I invariably ended up doing 'several from some countries'.
I came up with the fact I like CWC (coins with critters--including the naked-guy-on-horse subset), Coins From Mythology (CFM), and I really like alot of the Art Deco type designs from between WWI and WWII.
I thought about getting the 'holed by design' coins, but I'm not sure about that yet. Before this I toyed with the idea of an 1893 British set (nah, changed my mind), Australian Florins (tempting) and a 1934 New Zealand type set (also tempting). What else...hmm anything with a Stork on it is also fair game (but rightfully fits under the critter theme).
Of late, I have been looking at the French dependents/former colonies of the more modern eras as they have some really nice designs, and often can be had quite cheaply.
Also recently, I picked up a couple of South American 8 Reales/peso sized coins...started of with one of those Mexico Maximilians (has a couple gryphons) but now a few more countries have been added (Bolivia-llamas/Venzeuela-horse etc)--but how can you resist a smiling suns and volcanos???? I like them in higher circulated grades because I can touch them
A couple of Talers have fallen my way because of the beastie theme too--but I don't think I'll go after a 'serious' Taler grouping.
The biggest thing I have gotten hooked on is the mommy/baby/child theme. Many coins of course, but so far I have been hugely fascinated by the medals out there. In fact, between the mommies and the beastie medals I have outgrown my wall medal cabinet and am wating for my new one to arrive
Well, that pretty much sums it up...oh and I refuse to be a Conder Collector (no, not another collection!!!), but somehow have managed to pick up a few with the (mostly mythologic) beasties...sigh.
